Recipe – Bruschetta with Mashed Avocado on Sour Dough Toast

This is a super easy quick delicious vegan meal that will make you grin, because it tastes F A N T A S T I C !!

Bruschetta

Ingredients
30 sweet ripe small tomatoes
Half a red onion
2 tsp extra virgin olive oil
1 tsp balsamic vinegar
Half a Mashed Avocado
2 slices of sour dough toast
Salt and freshly ground black pepper to taste

Instructions
Dice – tomatoes, onion and leave them to the side
Pour – olive oil and balsamic vinegar into a bowl with salt and pepper
Combine – Tomatoes and onion in the mixture of olive oil and balsamic vinegar
Leave the mixture in the bowl for 5 minutes
Spread – the mashed avocado on the toast and then spoon the mixture on top. Che è finito

    • yep.. funny how omnivores ask me… well what do you eat for breakfast…. they dont realise that many breakfasts are vegan, but they just dont know :)

        My husband and I had a vegan wedding. After eating the delicious food that our vegan caterer had prepared, one of the guests said that it was the best food he had ever had at a wedding. Then in the next breath asked: ‘so, what do vegans actually eat?’ !! He hadn’t realised he had just eaten vegan food!

      • That’s great and a nice story about how some people do not know what vegans eat. I have been to a couple of weddings where I have had some vegan food and it was very good. So good that some of my table guests wanted what I was eating lol. Enjoy your weekend. Sounds like it will be a great day. Yeah early start is always the best… Enjoy !!!

      • We had a beautiful morning at the beach. I know you will get a kick out of this- I saw a sting ray! It swam right in front of me. I was able to watch it for a few minutes. I really wasn’t expecting that!

    • Oh that’s very cool to hear. Yes I think it can be a bit of a puzzle sometimes when you start, but meals like this are delicious and also it’s good to eat things you like and create them obviously without animal products. I have done that on my blog. Also I find your taste buds changes and food becomes a lot more enjoyable. ;)
