Recipe – Seitan (Wheat Meat)

I make seitan and freeze it to add to meals when I want to. I do not eat seitan that
often as I prefer fresh vegetables, legumes etc as a source to get my protein.
In saying that it is something different to eat and you can easily choose what flavours
you want the seitan to taste like. I first ate this in 2004 in the Jade Buddha Temple
in Shanghai. Being vegan I had to ask the waiter several times whether the
food was 100% vegan. The texture of seitan was that foreign to me.

Seitan

Preparation Time: 20 minutes, Cooking time: 15 minutes
Cooking Time: 15 minutes
Servings: 4

Ingredients
1 cup wheat gluten
3 Tbsp nutritional yeast
1 tsp thyme
1/4 cup soy sauce
1 Tsp oil
1/2 cup water or vegetable stock

Instructions
Preheat oven to 375F/190C.
Dry Mix: Mix gluten, nutritional yeast, and thyme together in a bowl.
Wet Mix In a separate bowl, mix water or vegetable stock, soy sauce, and oil.
Pour the wet ingredients into the dry ingredients evenly, and stir together
making the ball of gluten. Knead for a few minutes.
Form the gluten into a cylindrical shape. Press down and with a sharp knife,
cut the gluten into thin strips. Oil a cookie sheet, and place the strips on the cookie sheet.
Bake for 10 minutes, then flip them over and bake for an additional 3-5 minutes.

    I have never made seitan, but a non-vegan friend made some for us recently. I like the sound of adding nutritional yeast.
    How is the weather at your place? The wind is freaking me out. We are on moderate flood watch here. Thankfully we live on a hill, so we don’t get directly affected by flooding. Stay safe.

      Hi the Seitan is kind of strange but nice addition sometimes. Yes here it’s windy too. We had a power cut 3h ago so we have candles etc. so where exactly do you live again ? I thought you live for some reason in NSW ? :) keep safe ;)

        Yes, I’m just over the border from you but this weather pattern is headed South, so we are in the path. It is unbelievably windy. I’m assuming you are in Brisbane or Sunshine Coast? but you don’t have to reveal that publicly if you don’t want to! I hope you get your power back on soon.

    Hi we live at Redland Bay which is 30 minutes from Brisbane CBD. Good move to live on a hill. We also are also on a hill. The wind was pretty bad and rain. Our power went off at 6pm last night and came on again at 2pm today. We seem to get a lot of power cuts although we built our house only 1 year ago… Keep safe :) Thanks for asking too

    I love seitan a lot! I also love seitan mince! Seitan is my most loveavle product. I must try & get my hands on some wheat gluten. It is hard to come by over here maybe online?

    I’ve made seitan before, but yours looks much chewier and meat-like. Mine was more like the bread in French Onion Soup : { Perhaps I’ll give it another go

      This was very meat like.. and easy to make too. as soon as you pour that water wow it absorbs it so fast… this is very chewy and very flavoursome too… thanks for commenting
