Delicous crumble not too sweet with a hint of sourness from the beautiful vegetable
- Rhubarb. The apples are also a tad sour, but really any apple can be used. Enjoy !!!

Preparation & Cooking time: 30 -40 minutes
Serves: 8 persons
Ingredients
1Kg/2 pounds rhubarb stems, washed, trimmed and cut into small pieces
6 apples, peeled and cored and thinly sliced
1 Tbsp agave syrup
1 Tbsp fresh juice
1/4 C raw oats
1/2 C unbleached plain flour
1/3 C wholemeal flour
1/2 C raw sugar
1/2 C brown sugar
1/2 C melted vegan margarine
Instructions
Place the sliced apples along with the rhubarb with small water in a 4 litre saucepan
Cook covered over a moderate heat until the apples and rhubarb are soften also add one tablespoon of agave syrup.
Combine in a bowl. the raw oats, unbleached flour, wholemeal flour, raw sugar,
brown sugar and melted vegan margarine. Rubbing together in a coarse meal like consistency.
Spread the cooked apples and rhubarb in medium sized ramekins roughly 3/4 full.
Now spread evenly the coarse meal (crumble) on top.
Place the ramekins in the oven (preheated 180C/355F) and bake for 20 minutes or
until the topping is golden brown.

A classical apple & rhubarb vegan crumble. I want to dig in right now! In my garden, I have my own rhubarb plants & I can’t xait to make this when they are in full growth in Spring!

I have never been on a diet so I don’t know what it feels like, although as a kid I was my mum told me. When we were living in Hong Kong I was such a fat kid I had something wrong with me and also later TB which is not a good thing to have either.. I sent an email to you asking how you are as I had not heard from you for ages. I know you were okay as you have a great family around you… Welcome back then
Doing a 1200 calorie a day diet without being plant based is really difficult since animal foods are so calorie heavy. Doing the green smoothie challenge is easy in the sense that you’re not hungry, it’s just hard to get over sugar and bread cravings. Hard to imagine you as a chubby child! Oops, hardly every check my email associated with my vedgedout account. I’ll have to get in there!
That sounds tough. I suppose not feeling hungry is the key. You seem like you know what you are doing though. Those smoothie really look so healthy and filling too… Good lunch with it
don’t loose to much weight though .. You know you have when you have to dance around the in the shower just to get wet
